Smash Burgers with Special Sauce
Crispy-edged double smash patties stacked on brioche buns with American cheese and a tangy, creamy special sauce.

Ingredients
- 640 gbeef mince (80/20 fat) (divided into 8 × 80 g balls)
- 8 sliceAmerican-style cheddar slices
- 4 piecebrioche burger buns (halved and toasted)
- 60 gmayonnaise
- 2 tbspketchup
- 1 tbspAmerican yellow mustard
- 2 tbspsweet pickle relish
- 0.5 tsponion powder
- 0.5 piecewhite onion (very finely diced)
- iceberg lettuce and sliced tomato (to serve)
- flaky sea salt (to season)
Method
- 1.Mix mayonnaise, ketchup, mustard, relish, and onion powder to make the special sauce. Refrigerate until needed.
- 2.Heat a cast-iron skillet or griddle over the highest heat until smoking. Place 2 meat balls in the pan, scatter a pinch of diced onion on each, and immediately smash flat with a burger press or spatula. Season with flaky salt and cook 2 minutes without moving.
- 3.Flip each patty, lay a cheese slice on top, and cook 1 more minute. Stack two patties per bun. Repeat for remaining burgers.
- 4.Spread special sauce on both bun halves, add lettuce, tomato, and double patty stack. Serve immediately.
